Suya isn't just food — it's a way of life. A Northern Nigerian tradition passed down through generations, where meat meets fire, spice meets soul, and strangers become family over a shared skewer.

Suya [soo-yah]: The Northern Nigerian version of the shish kabob, sold on street corners and open-air venues. Succulent, spicy ram, lamb, and beef grilled to perfection over glowing coals. Skewered or sliced into bite-size pieces, sprinkled with extra spices, served with masa, cabbage, fresh onions, tomatoes, and wrapped in newspaper. That's the original.

At Sabo Suya, we've upped the game. Same tradition. Same soul. But a full menu, a proper dining room, and the same fire that's been burning since day one.

Meet Chef Adamu

A master of Northern Nigerian cuisine, Chef Adamu brings generations of suya-making tradition to every dish. His hands know the fire — when to flip, when to baste, when the meat has reached perfection.

The secret is in the yaji — the spice blend. Hand-selected herbs and seeds sourced directly from Nigeria. Ground by hand each day in the Sabo Suya kitchen. Every batch is prepared the same day it's used. That's not a recipe. That's a ritual.

Prior to grilling, each meat is marinated and coated with the secret spices. On demand, we provide extra on the side — for customers who like it extra-spicy.
